African Groundnut Stew




beef, mutton, chicken, pork, turkey or fish
1 tbsp vegetable oil
onions, peppers, tomatoes (blended into a paste)
2 cups raw peanuts
1 teaspoon dried ginger
1 medium onion (chopped)
Salt to taste
Seasoning (Knorr chicken, curry, thyme and white pepper)

You May choose to use anyone or any kind of meat. Cut the fish, beef, mutton, chicken, turkey or pork in servable quantities. Rinse properly and pour the meat into the pot, add a little water, onion, salt and seasoning and bring to a boil. Stir several times and allow to boil for 45 minutes, and then separate the meat from the meat stock and pour over the meat stock in a container. Mix raw peanuts and put aside. Pour vegetable oil into a pot, when it gets hot, pour the blended batter into oil and fry for 10 minutes, then pour into it blended peanuts and meat stock and stir it properly, and then pour the meat is cooked (if you're the type who prefers to fish, you can use the fish itself) and dried ginger in a pot, add salt and spices and let it cook for another 10minutes. Groundnut stew can be served on eba, pounded yam, Amala, rice, sweet potatoes or any dish you choose to eat.


For the preparation of eba, pounded yam or Amala which are widely eaten in Africa is as easy as walking into any store that sells African food, buy Gari, which is used in the preparation of EBA, the pounded yam, buy a pound Yam and Amala, buy elubo. Pour some water in a pot and bring to a boil. Measure 4 cups of any Gari, pound or elubo jam in a saucepan and stir until smooth. Pour some water in a pot, cover pot with lid for 2minutes, open the lid and turn the contents of the pot is repeated until a properly cooked, then serve eba, pounded yam or Amala with peanut stew.


This serves 4 people.
